Cappuccino-Chocolate Mousse Cake

I decided to change things up a bit and instead of making chocolate cupcakes, I made a cake. I also had a birthday celebration in which I wanted to make a cake for so it was another reason to switch from the usual cupcakes.  I found the cake recipe in the Bon Appetit book, but modified it a little and instead of using fudge frosting, I opted for a mousse frosting.  I added a lot of espresso powder to the cake batter because I love the smell and taste of espresso. The espresso and chocolate combination makes this cake very rich, but the lite and fluffy mousse balances out the cake part. (I could have eaten just the mousse alone…I had to refrain from licking the spatula!)

I’ve been seeing a lot of strawberries at the grocery store for cheap lately. So I picked some up to add to this birthday mousse cake.

Birthday Cupcakes- First Official Order!

This weekend I had my first official order of cupcakes! My friend’s friend ordered birthday cupcakes for his aunt and chose three flavors- red velvet, green velvet, and lemon. I was a little nervous because I wanted to put my best foot forward and make the cupcakes as perfect as possible…after all, I didn’t want to disappoint my first customer.

R+K’s Baby Shower

My friends Rey and Kate had their baby shower this past weekend and I was super excited when they asked me to make cupcakes for their event. I found cute little onsies and baby bottle cutters and decided to use them as the theme.  They are expecting a girl, so I went with a girl color scheme for the fondant toppers and made red velvet, chocolate, and peppermint chocolate cupcakes.

Rey is also a big fan of Spiderman, so as an extra, I made Spiderman cake pops with a lemon flavored cake. I was worried that the pops didn’t look like Spiderman, but most people were able to recognize and relate them to the actual character. What do you think?

Chocolate Whoopie Pies

I just got back from a much-needed vacation to Hawaii (I’m already missing it!) and I’m ready to be back in the kitchen! Before getting back to the swing of things, I stopped by Bay Street Emeryville for some last minute shopping. I couldn’t leave without picking up a whoopie pie from Teacake Bakeshop. Whoopie pies are essentially made of creamy frosting sandwiched between two round, soft pieces of cake. I forgot how good these things are, and so it inspired me to whip up a batch of my own.

Just so happen, it was my friend, Kate’s birthday, so I decided to make her some chocolate whoopie pies with a classic buttercream frosting. The cake part came out super moist and somewhat crumbly, but that didn’t matter because you can basically finish the whoopie pie in two bites.

Whoopie pies are considered a Pennsylvania Amish tradition, and they even have a Whoopie Pie Festival held in September! If only there was one in the Bay Area…
