80’s Themed Cupcake Toppers

I had a fun custom order request from a previous work acquaintance for some birthday cupcakes and cupcake toppers. I made these 80’s themed toppers for another client before and she requested the same ones, which include Pacman, cassette tapes, Rubik’s Cube, and I ❤ 80’s. The toppers added some fun to the cupcakes! Check them out:

Pacman Toppers. Fact: The Pacman arcade game first released in Japan in 1980.

Rubik’s Cube Toppers. Fact: Originally called the Magic Cube, these were sold by Ideal Toy Corp in 1980.

Cassette Tape Toppers. Fact: One of the most common formats for prerecorded music from the early 1970’s to 1990’s.

Chocolate Decadence- Chocolate Ganache Cake

I have been meaning to experiment with chocolate ganache on cupcakes or cakes since the only time I used ganache was for filling french macarons. It’s easy to make, and it tastes so good! So for my friend, Theresa’s early birthday celebration, I decided to go with a double layered chocolate cake glazed with a bittersweet chocolate ganache, which we surprised her with over dinner.  Since she’s a big chocolate fan, I thought the chocolate cake with the rich ganache was quite fitting. Everyone enjoyed the cake and Theresa loved the ganache!

On top of that, to play up the look and flavor of the cake, I drizzled homemade caramel sauce on top. I made the caramel sauce in advance and still have a lot left, which I’m sure I will use on cupcakes and ice cream in the near future.

Double the Sweets: Red Velvet Cake + Chocolate Devil’s Food Cupcakes

For Katie and Alan’s gathering at their new home, I decided to make a two-layered red velvet cake, with the frosting of choice- cream cheese frosting. The cake was easy to make, and turned out really moist; however, I was struggling with frosting the cake to perfection.  I had crumbs of cake mixed in with the frosting, but I was determined to smooth the tops and sides out. After carefully scraping and leveling the frosting numerous times, I was finally satisfied.

Katie and Alan’s adorable daughter, Ava, requested cupcakes, so I whipped up a batch of chocolate devil’s food cupcakes (a new recipe I’m experimenting with!). These one’s were definitely more chocolatey in texture than the other chocolate cupcakes in my other posts. Since I had extra cream cheese frosting left, I used them for the cupcakes as well.

Baby Shower Cake Pop Bouquet

My friend requested cake pops for a baby shower event at her work. Since it was a joint baby shower for a girl and boy, I made a bouquet of pink and blue cake pops. She chose red velvet and lemon flavored cakes with pink and blue coating. I ended up really like the two colors together!
