Chocolate Genoise Cake with Chocolate Buttercream

Happy Birthday, Herman! It was actually on February 8th, but we had a celebration dinner with friends on February 7th. Instead of going out to buy one of his favorite types of sponge cake from the Asian bakeries I decided to make his birthday cake.  I went with a chocolate genoise, which is a lighter, airier cake.  It was soaked with a subtle rum flavored syrup, filled with chocolate ganache and frosted with chocolate buttercream. On top of that I drizzled the entire cake with melted white and dark chocolate. Yes, it was a choco-a-holic type of cake!

Coffee and Lemon Macarons

It’s been awhile since I made macarons, so this weekend I decided to revisit them. They are also one of the most challenging things I’ve had to bake, so I tend to make them for special occasions now. I was also inspired by a book I picked up this weekend- it has 30 recipes of macarons!

Picking the flavors was easy- I went with my current favorite dessert choices-  coffee and lemon. The coffee macarons were filled with a dark chocolate ganache, while the lemon was filled with a tangy lemon buttercream. I purposely make these bite-size in order to feel less guilty if I eat two or three of them in one sitting.

The Best Things in Life Are Chocolate

I met up with my friend this weekend, who is a talented freelance makeup artist, to do my makeup for an event.  I wanted to give her something in exchange and decided to make some decadent chocolate cupcakes.

The original plan was to only frost the cupcakes with a chocolate buttercream frosting.  However, I got a little chocolate crazy and decided to fill the cupcakes with milk chocolate ganache that I had left over.  A little too much chocolate?…That was my first thought, but one can never have too much chocolate!

Easter Macarons

Happy Easter!

Unfortunately, I had an unexpected fever on Friday evening that gave me a lasting headache all night Friday and the entire Saturday.  I even had to cancel going to the Giants game on Saturday! It was a bummer that I couldn’t do much, but I attempted to make the most out of it by baking.

Pistachio with white ganache filling. The fresh crushed pistachio on top gave a good crunch.
